"Preparing" Yummy Baked Goods

I don't know if this post really counts as a "preparing" post, unless trying to eat healthy while desiring sweet treats "prepares" you for the multitude of things life throws at you.  This is a recipe to "prepare" some yummy baked goodies.  Mainly I just wanted to share my secret recipe for a delicious treat that is easy and low-guilt.  I made it again just the other day.  I first read about it in a Hungry-Girl cookbook (which I didn't buy; I just flipped through it in Wal-Mart and then put it back -- shameless, I know).

Take 1 box devils food cake mix
Add 1 can (or 2 cups) of pumpkin

Mix.  Bake according to the box directions.  I usually make mine into 12 large cupcakes (portion control!).  I've also made cakes out of this same recipe.  It's delicious.  You cannot tell its lowfat or sneaky-healthy -- there's plenty of sugar in the cake mix to disguise that.  The pumpkin keeps everything moist.  It probably breaks apart and is slightly more sticky than a typical cake, but it's still really, really good.

Clara's first birthday cake was made with the above recipe.


No one suspected a thing.
